As the holiday season starts ramping up, no-brainer (relatively healthy!) recipes become my go-to for everyday eating. A simple spin on a Caprese salad can be made hearty with the introduction of grilled portobello mushroom caps, and slightly decadent by substituting buffalo mozzarella with burrata. Paired with roasted golden beets and sweet yellow and orange peppers, heirloom tomatoes, basil, and balsamic vinegar, this salad works perfectly on lingeringly warm November days, and amidst the holiday rush!
