In my opinion, Champagne is one of those magical ingredients that can be combined with nearly anything in order to make a uniquely delicious cocktail. Inspired by the flagrant brain exhibitionism of Doctor Finklestein, I used an HDE Halloween tray to shape a simple homemade strawberry smoothie into brain-shaped ice cubes, perched atop Champagne with a few drops of cranberry bitters. As the ice cube melts, the cocktail is transformed into an effervescent strawberry creamsicle (and is a drink that can be updated with any berry, based on season and preference!).
Strawberries & Cream Champagne Cocktail
2 cups half & half
1 cup frozen strawberries
1 Tbsp honey
1 tsp vanilla extract
2-3 drops Cranberry bitters
Blend half & half, strawberries, honey, and vanilla extract until smooth.
Pour into ice cube trays, and freeze over night.
Combine Champagne and bitters in flute, add ice cube, and serve.
