The following Brown Sugar Wafer Cutout recipe is one that was passed down to me from my Swedish great grandmother, and always tastes absolutely like Christmas to me. I decided to use a present-shaped cookie cutter when rolling them out this year, then flooded the cooled cookies and decorated them with edible pen to mimic the gifts produced by the folks of both Halloweentown and Christmastown.
Brown Sugar Wafer Cutouts
1 1/3c packed light brown sugar
1 c softened butter
1 t vanilla
4 c flour
½ t salt
½ t soda
½ t cinnamon
Cream sugar and butter; add eggs one at a time, then vanilla. Combine dry ingredients in separate bowl; use wire whisk to blend, then add to sugar mixture; do not over beat. Chill before rolling out as thin as possible. Bake cut-outs in preheated 375 degree oven 5-7 mins. until set and browned.
