Juggling Halloween festivities (and treats!) on a weeknight can be a bit of a challenge, so I figured the perfect solution for a pumpkin-themed treat for All Hallows’ Eve would be a simple pumpkin pudding. Topped with freshly whipped cream and some shaved dark chocolate, this dessert more than fits the bill when it comes to satisfying my autumnal foodie cravings.
1 package vanilla instant pudding
1 can evaporated milk
1 can pure pumpkin
1 tsp pumpkin pie spice
Follow instant pudding directions, beating vanilla pudding mix and evaporated milk together in a large bowl. Refrigerate for five minutes, then incorporate pumpkin and pumpkin pie spice, mixing well. Refrigerate for ten minutes, or until ready to serve.
