Almond White Chocolate Truffles

I know marzipan can be one of those love it/hate it baking ingredients, but the taste always reminds me of princess cake (my favorite!) and the nostalgia of the ornate animal-shaped truffle my mom used to treat me to from Neiman Marcus as a child (I expressly remember one shaped like a pink little pig, and one like a petite gray elephant). Using the Odense Marzipan recipe below, my take on decoration involved the patterns of the clothing of the residents of Halloweentown from The Nightmare Before Christmas, brought to life with great patience and edible markers (and Jack's 3D tie is made out of wafer paper!).

Almond White Chocolate Truffles

1-11 oz package of white chocolate chips
1-7 oz box of Odense Marzipan, grated
1/3 cup heavy cream
1 tablespoon Baileys Irish Cream with Caramel

Place white chocolate chips, Marzipan, and heavy cream in a bowl set over a pan of barely simmering water.

Stir constantly with a rubber spatula until mixture is completely smooth. Remove from heat and whisk in Baileys Irish Cream with Caramel and food coloring (if desired) until favorite color of green is achieved. Cover bowl and refrigerate for 2 hours.

With 2 teaspoons (or small cookie scoop with a wire release) drop dollops of truffle mixture onto a parchment lined cookie sheet. Shape into balls and refrigerate.

Leave truffles plain, dip in dark chocolate or roll in confectioners sugar for a decorative effect.
